1. Apricot Shrikhand

This dish is a lovely combination of golden apricots and yoghurt, garnished with pistachios. The apricots and curd add their healthy goodness, making it a wonderful festival treat for all.

Ingredients

Golden apricots – 15-20

Natural sweetener Honey/ Stevia- 6 teaspoons

Hung yoghurt – 2 cups

Pistachios, sliced – 10-15

Method

• Slice the golden apricots. Take them in a pan, add one and half cups of water and half quantity of sweetener and mix. Cook on low heat for fifteen to twenty minutes.

• Take hung yoghurt in another bowl. Add the remaining sweetener and mix. Squeeze this mixture through a muslin cloth.

• Put the shrikhand in a ceramic bowl. Remove the stewed apricots from heat and put them on top of the shrikhand.

• Garnish with pistachios and serve.

2. Kairi Panha

• Methi seeds – ½ tsp, soaked for 2-3 hours (for bitterness)

• Coriander seeds – ½ tsp

• Black pepper powder – ½ tsp (for spiciness)

• Pink salt – as per taste (for saltiness)

Method:

• Soak the tamarind in warm water for at least an hour to soften it.

• Extract the tamarind pulp and strain it into a bowl, adding water to dilute it.

• Mix in jaggery until fully dissolved, creating a sweet base for the package.

• Add finely chopped mangoes, soaked methi seeds, coriander seeds, black pepper powder, and pink salt to the tamarind-jaggery mixture.
