Warm Up Your Soul (and Your Immunity) with this Beetroot, Carrot, Tomato Soup
Simple, healthy, comforting soup made with just a few ingredients. This soup is a different version of Tomato soup.
Soup is the first choice whenever we are in a restaurant and are the all-time favourite of the family. This vibrant soup isn’t just a feast for the eyes; it’s a nutritional powerhouse.

Let’s dive into the benefits of each star ingredient:
- Beetroot: Packed with nitrates, beetroot enhances blood flow and lowers blood pressure, keeping your heart happy. Its earthy richness adds depth and color to the soup.
- Carrot: Bursting with beta-carotene, carrots strengthen your immune system and vision, while their natural sweetness balances the beetroot’s earthiness.
- Tomato: These antioxidant powerhouses are rich in lycopene, protecting your cells from damage and adding a touch of acidity to the mix.

I have skipped adding any oil or butter to this recipe, however, if you wish you can add butter as per your taste. The taste was awesome. Adding fresh basil leaves gives a nice aroma and taste to the soup.
Soup Recipe
Ingredients:
- 2 medium beetroots, peeled and roughly chopped
- 2 carrots, peeled and roughly chopped
- 2 large tomatoes, roughly chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: Fresh herbs like basil leaves0 for garnish

Instructions:
- Heat olive oil in a large pot. Sauté onion and garlic until softened.
- Add beetroot and carrots, and cook for 5 minutes until slightly softened.
- Add tomatoes and cook for another 5 minutes until tomatoes begin to break down.
- Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes until vegetables are tender.
- Blend the soup until smooth using an immersion blender or countertop blender.
- Season with salt and pepper to taste.
- Garnish with fresh herbs and serve hot with a crusty bread.
